Since I'm trying to grow my youtube channel this year, every occasion to film some sculpting process is ceased, so thought it would be a perfect project to record.However only avocados felt too little, so I looked up for vegan recipes with avocado.Now, you have to know that I've been looking for vegan baking for quite some time and been wanting to use avocado as a fat replacement. Hence why, when I stumbled upon GimmeSomeOven brownie recipe, I knew I had to try those.Miniature Avocado Brownies, Stéphanie KilgastI ended up tweaking the recipe, so here is my own version, sweeter than the original and with some added peanut butter for some extra yumminess.Miniature Avocado Brownies, Stéphanie Kilgast

Vegan Avocado Brownies

Inspired by GimeSomeOven's recipe.- 1 mashed avocado- 4 tbsp vegetal oil (I used canola)- 2 tbsp peanut butter- 130 g flour- 65 g cocoa powder- 150 g raw cane sugar- 1 tsp baking soda- 1/2 tsp salt- 180 mL water (to which I added 1 tsp soluble coffee)- 200 g dark chocolate chipsPre-heat oven at 180°C.Start by mixing the fats together, mash the avocado, add the oil, then the peanut butter and mix until smooth.Add the dry ingredients little by little, mixing along.Add the coffee water at the end, mix thoroughly.Fold in the chocolate chips.Bake for 15-20 minutes.I'd suggest slightly undercooking is better than overcooking, but that's because I like fudgy brownies :)
